Olive Oil Granola

I was looking for an alternative to my tried-and-true granola recipe and came up with this keeper. This recipe can be doubled, but it will take an additional 20 minutes of baking if using one large sheet pan.

  • 3 cups old-fashioned oats
  • 1 cup raw pistachios
  • 1 cup raw pumpkin seeds
  • 1 cup coconut chips
  • 3/4 cup maple syrup
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 3/4 cup dried apricots, chopped
  • 1/2 cup dried cranberries or cherries

Preheat oven to 300°. In a large bowl, combine oats, pistachios, pumpkin seeds, coconut chips, maple syrup, olive oil, cinnamon and cardamom.

Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stirring every 10-15 minutes, until golden brown.

Add the dried fruit and toss to combine. I like to eat this with a little yogurt, homemade or Greek are delicious.
