Tried and True Granola


This is the granola that Neil Diamond was talking about when he sang “Crunchy Granola’s NEAT!” It’s that good. This makes a large batch, but it keeps forever and usually one batch is eaten standing at the counter by the handful when it comes out of the oven anyway.

  • 6 cups old-fashioned oats
  • 1 1/2 cups sweetened coconut
  • 1/2 cup flaxseed meal, wheat bran, wheat germ (optional)
  • 3 cups whole or chopped nuts (any kind, really)
  • 2 teaspoons kosher salt
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup vegetable oil
  • 2 cups dried fruit

Preheat oven to 250°F.

In a large bowl, combine oats, coconut, flaxseed, nuts and salt.

In a small bowl or measuring cup, whisk together brown sugar, maple syrup and oil. Pour over oat mixture and stir to combine really well – longer than you think.

Divide between two rimmed baking sheets and spread evenly. Bake for 25 minutes, rotate trays and bake for another 25 minutes.

Turn the oven off and let granola cool in oven. Toss with dried fruit. Store in an airtight container for no longer than as long as it lasts.
