Dad-Latchés

This is a relatively new recipe that we learned about from our neighbor, Brandon Wegge, who also gave it the name. They came about because we would occasionally buy kolaches from the St. Louis Kolache Factory. These were not exactly like the kolaches of my youth, which were exclusively open-faced with fruit. Instead most of these were savory and encased in dough like buns. Dad-lachés are a Dad version of these made at home with refrigerator biscuits. And so easy that a Dad can make them. They’re pretty good, and gave me a new appreciation for refrigerator biscuits, which are a miracle of modern food manufacturing.

Dave

  • 1 tube “Grands” regular or Southern-style refrigerated biscuits
  • 4-5 eggs
  • Cheese
  • Cooked bacon or ham

Preheat oven to 350°F.

Dice ham or crumble bacon into small pieces.

Scramble eggs until set, breaking up into small pieces along the way.

Smash or roll out the biscuits into 5-6″ disks. Place a spoonful of eggs in the middle and top with bacon/ham and cheese. Pinch together and seal to form a bun.

Bake for 12-15 minutes until golden brown.
