This dressing is excellent on grilled vegetables, or on any salad, especially those with goat cheese, or toasted nuts and dried fruit.

- 1 tablespoon soy sauce
- 3 tablespoons balsamic vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/4 cup olive oil
- 1/4 teaspoon kosher salt
- Black pepper
Whisk all ingredients together in a bowl, or combine everything in a jar and give a vigorous shake. Adjust seasoning to taste. This will keep in the refrigerator for 2 weeks.
