I love cold, crunchy salads in the summer and sometimes this is just what I want. There are different goodies you can add or substitute to this recipe. I like the combination of dried cranberries and slivered almonds or raisins and sunflower seeds. I also like putting the red onion in a little vinegar and water to quick-pickle.

Salad:
- 2 heads broccoli
- 1/2 cup thinly sliced almonds, toasted
- 1/3 cup dried cranberries
- 1/3 small red onion, diced
Dressing:
- 1/4 cup buttermilk
- 1/4 cup mayo
- 2 tablespoons cider vinegar
- 2 tablespoons sugar
- Salt and pepper
Trim broccoli and thinly slice – by hand or by using the slicing blade of your food processor.
Toss with almonds, cranberries and red onion in a large bowl.
Whisk the dressing ingredients in a small bowl, seasoning with salt and pepper to taste. Pour over broccoli and toss well.
