Ramen Slaw

I love this slaw and I especially love this dressing. Fish sauce and lime juice together is total harmony in my book. Side note: on fasting days I’m not above sprinkling a little of the ramen seasoning packed in a cup of hot water for a mug of hot salty broth. I mean, c’mon, it’s delicious.

Salad:

  • 1 package ramen noodles, seasoning packed removed
  • 1 pound combination shredded cabbage, carrots, broccoli slaw, etc
  • 2 green onions, sliced – or- 2 tablespoons sliced red onion

Dressing:

  • 2 tablespoons rice wine vinegar
  • 2 tablespoons fish sauce
  • 1/4 cup lime juice
  • 1 tablespoon minced garlic
  • 2 tablespoons sugar
  • 1 teaspoon sesame oil

In a large bowl, toss together cabbage, carrots, or whatever bag of slaw mixture you’re using with green onions. Crumble the ramen noodles into the bowl and mix to combine.

In a small bowl whisk together all the dressing ingredients. Pour over the slaw and stir to blend well. Let sit 20-30 minutes before serving.
