Toast, Tomato and Cheese

This is a quintessential Spencer family nosh. This is the first thing we make when we can get our hands on a fresh ripe tomato from the garden and then we eat it several times a day. It is important to follow this recipe exactly.

  • 1 slice of decent bread
  • 1 or 2 ripe tomatoes- homegrown or farmer’s market/best quality
  • 2 slices cheddar or other decent cheese
  • About 2 tablespoons mayo – Hellmann’s or Dukes

1. Scald tomatoes: boil water in a small pot, electric tea kettle, microwave, or insta-hot. Place tomatoes in boiling water for 5 seconds. Peel tomato and slice into very thick slices.

2. Toast bread

3. Spread mayo on toast. Fit as many thick slices of tomato onto the toast as you can. Top with cheese.

4. Place sandwich on a cookie sheet under the broiler on high until the cheese is brown and bubbly.

5. Enjoy.


“Cheese Yummy” Variation: This was created by cousins Steven and James, and has been a mainstay for my kids since day one.

1. Toast bread

2. Add mayo (I say this is optional, but Steven disagrees)

3. Top with Cheese

4 Microwave for 15-20 seconds until cheese is melty
