Spaghetti Carbonara

This has been my birthday dinner request for years and years. Spaghetti and bacon already sounds like an amazing combinations, and it is. The best part is when you get to the bottom where all the leftover bacon is, the birthday girl always gets dibs.

  • 1 pound spaghetti
  • 1/2 pound bacon
  • 2 eggs
  • 2 egg yolks
  • 1/2 cup Parmesan cheese
  • Salt and pepper

Bring a large pot of water to a boil.

Meanwhile, dice bacon. In a medium skillet, fry bacon until cooked through, but not quite crispy. Set aside, reserve 2-3 tablespoons of the bacon grease.

In a large bowl, beat eggs and yolks together with a generous pinch of salt and pepper. Place a colander in the sink for your pasta. Beat the eggs with the egg yolks in a large bowl and place next to the sink with tongs nearby.

Cook spaghetti until it is done. Drain the spaghetti, then immediately place it into the bowl the the eggs and toss until the eggs coat the pasta and turn into a velvety sauce. Pour the bacon along with reserved bacon grease on the pasta and toss to coat.

Finish with Parmesan cheese, salt and pepper to taste. Serve immediately.
