No-Bake Granola Bars

I’ve always enjoyed chewy Quaker granola bars. I wanted to make my own version and cut down on wrappers and maybe improve on a little.

  • 1/2 cup butter
  • 1/2 cup honey
  • 1/2 cup packed brown sugar
  • 4 cups quick cooking oats
  • 2 cups crispy rice cereal
  • 1/2 tsp vanilla
  • 1/3-1/2 cup mini chocolate chips

Line a 9×13″ pan with parchment, leaving enough extra on two ends to make removing the bars easier. In a large bowl, stir oats and rice cereal together. Set aside.

In a small saucepan, melt butter, honey and brown sugar together over medium-high heat until it starts to boil. Reduce heat and cook for two minutes. Add vanilla and stir. Pour over dry ingredients and mix well.

Pour mixture onto sheet pan and press together firmly. Let cool slightly and then sprinkle mini chips over the top and press down.

Cool completely before cutting into bars. These are best stored in the refrigerator.
