Oatmeal Butterscotch Bars

These bars have been a favorite for a long time. This is adapted from an America’s Test Kitchen recipe. The brown butter is key.

  • 2 cups flour
  • 3 cups old-fashioned oats
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cups butterscotch chips
  • 1 1/2 cups butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 3 teaspoon vanilla

Preheat oven to 350°F. Line a 9″x13″ pan with a large piece of foil- leaving foil hanging out of pan to make the bars easier to remove. Lightly grease the foil and pan.

Combine flour, oats, soda and salt in a bowl. Place butterscotch chips in a large bowl. n a small saucepan, melt butter over medium heat. Continue to cook until butter becomes brown and nutty. Pour butter over butterscotch chips and whisk to melt. Add brown sugar and stir. Whisk in eggs and vanilla. Stir in flour mixture until well combined.

Pour into prepared pan and smooth evenly. Bake for 35 minutes, until the edges are brown and the center is just firm when touched.

Cool completely in pan before lifting out and cutting into squares.
