Oatmeal Raisin Cookies

This is my favorite cookie. 2 out of 3 of my kids have done a 180 on raisins because of this cookie.

  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 cup butter
  • 2 tablespoons honey
  • 2 teaspoon vanilla
  • 2 eggs
  • 2 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cup quick-cooking oats
  • 1 1/2 cup raisins

Cream butter and sugars together until smooth and fluffy. Add honey and vanilla and mix. Beat in eggs, one at a time, scraping the bowl as needed. Mix in flour, baking soda and salt until well blended. Stir in oats and raisins. Scrape the bowl and mix well.

Shape into balls using about 2 tablespoons of dough, or use a cookie scoop. For cookies that don’t spread quite as much, chill the cookie balls in the refrigerator for at least an hour, and up to overnight.

When ready to bake, preheat oven to 350°F and place cookie balls on greased or lined baking sheet spaced about 2 inches apart. Bake for 15-20 minutes until light brown and still a little gooey in the middle.
