Apple Pie

There is nothing more American than apple pie. I have often dreamt of flying an apple pie on the flagpole instead of Old Glory. Just think, when a senator or pop star dies, that new symbol of freedom and peace (piece) would be at half-mast, making it that much closer to being able to reach it. Sure, it’s been up there for months, and it couldn’t feasibly be a real pie for sustainability reasons; in my experience, pies don’t weather well. But we could set aside our differences and reach for that pie with high hopes. Those high in the sky, Apple Pie hopes. Apple Pie for President, 2028.

  • 1 recipe double pie crust
  • 3/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons flour
  • 6 cups pared, sliced apples
  • 2 tablespoons butter

Preheat oven to 450°F. Combine sugar, cinnamon, nutmeg, salt, lemon juice, flour and apples. Pour into pie crust. Dot with butter. Top with pie crust, seal and flute edges.

Poke top crust with fork several times and cut your signature slits for steam to escape. Sprinkle liberally with cinnamon sugar so your pie is not “naked”.

Bake for 10 minutes at 450°F, then turn oven down to 375°F and bake for another 40-50 minutes, until the filling is bubbling in the center of the pie.
