Quick Milk Buns

In looking for the best Chinese Pork Bun recipe, I stumbled upon the best Milk Bread, ala hamburger bun recipe. It is SO simple. Just put everything into the mixing bowl and mix on low for 15 minutes. I sometimes substitute 1-1 1/2 cups whole wheat flour for that much bread flour and whole milk for the half and half. The buns are soft – just right for hamburgers – and the dough is also good for cinnamon bread or soft sandwich bread

  • 2/3 cup heavy cream
  • 1 cup milk
  • 1 egg
  • 1/3 cup sugar
  • 1/2 cup cake flour
  • 3 1/2 cups bread flour
  • 1 tablespoon yeast
  • 1 1/2 teaspoons salt
  • 1 egg mixed with 1 tablespoon water for egg wash

Place everything in the bowl of a stand mixer in the order listed. Mix on low for 15 minutes. Cover and proof for 1 hour.

Grease 2 loaf pans or a line a baking sheet with parchment.

Punch down the dough onto a floured surface and cut it in half. Form into 2 loaves or 16 buns. Fill buns with filling if desired. Let proof for 1 hour.

Preheat oven to 350°F. Brush loaves/buns with egg wash. Bake loaves for 20-25 minutes and buns for 15-20 minutes.
