Castilian Hot Chocolate

This is our favorite hot chocolate. It is so thick, it’s pretty much hot pudding. Dave says it’s like molten lava, it stays hot for so long. You WILL burn your tongue – maybe not every winter, but a lot of them.

  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 1/2 cup water
  • 1 quart rich milk

Combine cocoa, sugar and cornstarch in a medium saucepan. Whisk in the water until the mixture is smooth. Heat until the mixture begins to thicken, then add the milk. Cook over medium heat until thick and glossy.
