Taco Salad

I could eat this everyday. This has everything I love about nachos, but with a better ratio of chips to toppings, in my opinion. Do yourself a favor and just buy a jar of nacho cheese already. Live, dammit.

  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 can black or pinto beans, drained
  • Spring mix
  • Fresh tomatoes, diced
  • Green onion, chopped
  • Avocado, diced
  • Black olives
  • Pickled jalapeños
  • Nacho cheese
  • Fritos or tortilla chips

Brown beef in a medium skillet. Add salt, cumin, chili powder and garlic powder and cook until fragrant. Stir in drained black/pinto beans and heat through.

Heat nacho cheese in a small saucepan. Prepare any other toppings.

Pile spring mix on each plate. Top with beef/bean mixture, diced tomatoes, green onion, olives, jalapeños, and avocado. Spoon nacho cheese over the top and sprinkle with chips.
