
This is my standard recipe for meatballs, with a few variations. John started a tradition several years ago when we sit down to dinner – he and the girls say “thank you for this delicious and nutritious meal, we love you” in unison. When we have meatballs there is usually more enthusiasm.

Standard Italian:
- 1/2 pound pork
- 1/2 pound beef
- 1 egg
- 1/2 medium onion, finely diced
- 1 cup Panko/coarse bread crumbs
- 1 teaspoon kosher salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
Meal Suggestion: Spaghetti & Meatballs
Asian Pork:
- 1 pound pork
- 1 egg
- 1 cup Panko/coarse bread crumbs
- 1/2 medium onion, finely diced
- 1/2 teaspoon kosher salt
- 2 cloves garlic, mined
- 2 tablespoons fresh ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
Meal Suggestion: Rice bowls
All-Beef Kofta
- 1 pound ground beef
- 1 egg
- 1 egg yolk
- 1/2 medium onion, finely diced
- 1 cup Panko/coarse bread crumbs
- 1 teaspoon kosher salt
- 2 tablespoons cilantro, mined
- 2 cloves garlic, minced
- 1 tablespoon baharat
- 1 tablespoon cumin
Meal Suggestion: Kofta, Hummus, Pita, Cucumber & Tomato Salad
Preheat oven to 400°F. Line a baking sheet with foil. Grease foil.
Combine all meatball ingredients in a medium bowl and mix by hand until mixture is uniform. Do not over-mix.
Form into golf ball-sized balls – by had or using a cookie scoop. Place on prepared baking sheet. Bake for 20 minutes until brown.
